McGillin’s Sausage Platter

Chris Mullins, owner of McGillin’s, recommends fresh sausages from Martin’s at the Reading Terminal Market. Serves four.

>> 4 knockwurst sausages
>> 4 bratwurst sausages
>> 2 medium onions, thinly sliced
>> 24 ounces of your favorite beer (McGillin’s uses Yards)

>> 1) Combine sausages, onions and beer and marinate for up to 24 hours.

>> 2) In a large pan saute sausages and onions for 3-5 minutes until nearly cooked, and then place sausages on the grill for 3-5 minutes, until grill marks appear.

>> 3) To serve, place sausages on plate and top with the sauteed onions. McGillin’s also serves this dish with sauteed pierogies, a side of sauerkraut and a dollop of sour cream.
