Barbecue honcho and cookbook author Steve Raichlen will be at Fork (306 Market St.) this Friday working his magic on the Wolf grill alongside chef Thien Ngo. He won't be doing the kind of burgers and franks you're used to, either. Feel like some green chile chicken under bricks with fiery salsa verde, grilled Romanian garlic hanger steak, Cuban citrus and garlic roast pork, or grilled swordfish with heirloom tomato-corn salsa? If you sit on the sidewalk you get the added satisfaction of watching Raichlen work. The $45 price excludes liquor, tax and tip. (Items are also available à la carte.) >> Center City goes down on the farm this month during the Pennsylvania Dutch Festival at Reading Terminal Market (12th and Arch sts.) the weekend of Aug. 7. Although the festival will feature handmade crafts (furniture, quilts and household items among them), prizes and a live petting zoo (featuring horses, goats, sheep, calves and donkeys), we all know the food is what you're interested in. You'll be able to chow down on a variety of homemade items ranging from donuts to ice cream to funnel cakes to pies to preserves to fudge and more (okay, mostly handmade sweets). Follow your pig-out with a pony ride, tool around the city in an authentic Amish buggy or win various handmade prizes. >> After eating all that homemade food, you're sure to feel bad about your complete inability to do anything worthwhile in the kitchen. Look no further than the August and September classes at Sur La Table (500 Rt. 73 S., Marlton, N.J.), which range in price from $45 to $70 per session. Learn various levels of knife skills. Find out how to make desserts like blackberry peach pandowdy (or just learn what pandowdy is). Cook pasta dishes, tarts, dim sum, crepes or poultry like the pros. Or if you're too lazy, skip the hands-on classes and go to one of the classes where they do it all for you, whipping up Italian comfort food, harvest soups and al fresco dining among other tasty creations.
